Crock Pot Series: Vegetarian “Gumbo”

I know, I know…You’re probably thinking “Vegetarian gumbo???” Stay with me. This recipe is healthy/eco friendly, easy to prepare,  and tastes amazing. As a vegetarian, I’m always looking for ways to enjoy comfort foods that I grew up with but without the meat. This one is definitely a keeper!


2 small bags of frozen okra

3 cans of dark red kidney beans drained and rinsed

1 can of diced tomatoes

1 frozen bag of the trinity (onion, bell pepper, celery)

3 cups of vegetable stock

Tony Chachere’s Creole seasoning to taste


Add all ingredients into the crock pot. If you’re feeling fancy, add some vegan “sausage” to the mix. On the side, cook some brown or white rice to go with your gumbo. Let the crock pot do its thing for about 2 1/2 hours, and you’re ready to chow down.
