Upgrade Your Meals for The Low-Low

Cheap. Easy. Quick. We’re talking about food, people. Legumes, grains, and pasta are cheap and easy to upgrade for a delicious meal without breaking the bank or spending hours in the kitchen!

LEGUMES

Legumes include things like peas, lentils, and beans. For our upgrade today, we’re looking at a curry recipe with lentils. Check out the recipe here! You’ll only need 30 minutes to cook this meal, and it’s great to have the next day too. Meal prep maybe?? This recipe can give you a break from your usual routine without breaking the bank.

GRAINS

Your grains are items like rices, oats, barley, etc. I like trying new things, but we’re going to use an old school recipe that utilizes rice. Yes, yes…Red Beans & Rice! You can cook this meal stovetop OR in your crock pot. Even better, right? This particular recipe has sausage in it, but I like to use a plant based meat substitute like Tofurky. You can also substitute the white rice for brown which has more health benefits.

PASTA

Of course, I had to give pasta a section of its own. There are many different types of pasta out there. Some of the basics are whole wheat, whole grain, corn, and rice pasta. This “skinny” recipe uses whole grain spaghetti to make a savory meal that is affordable and quick to make! You’ll be ready to eat in less than 30 minutes.
