What’s up everyone?! Most days I just want food that’s simple, light, and healthy. Who’s with me? Today’s recipes are so easy to prepare and delicious. It’ll make the perfect lunch or side dish. So let’s hop into it!
1 cucumber, peeled and chopped into ¼ moons
2-3 roma tomatoes, chopped
½ of a red onion, sliced
1-2 teaspoons dried oregano
½ cup crumbled feta cheese
4 cups leafy greens (optional)
salt and pepper (to taste)
black olives, pitted and sliced (to taste)
¼ cup olive oil
2 tbs red wine vinegar
1 lemon juiced
2 cloves of garlic, smashed and peeled
1 tsp dried oregano
salt and pepper to taste
SALAD (makes 2-4 servings)
- Combine all ingredients in a bowl. Sprinkle feta cheese on top.
- Add leafy greens for more bulk when ready to eat.
VINAIGRETTE (makes 1/2 cup)
- Combine ingredients in mason jar. Shake until well mixed.
- Refrigerate up to 1 week.
