What’s up y’all?! I made this bowl one night after work when I realized there was “no food” in the house. Haha I’m sure we’ve all been there. Luckily, there are a few items that always seem to be around: beans and quinoa. It made a large and delicious meal. No complaints here!
1 cup black beans, drained and rinsed
1/2 cup dry quinoa
1/2 small/medium onion
1 small bell pepper
1 tbs olive oil
seasonings: cumin, pepper, salt, garlic powder, cayenne pepper, Sriracha
- Cook quinoa according to package instructions.
- Sauté veggies with oil & seasonings.
- When the veggies are almost cooked through, add beans.
- Mix in quinoa and add to bowl.
- Top with Sriracha sauce.
