Healthy Vegan “Pizza”

Good morning! Today’s recipe is great for a quick dinner. The toppings are customizable, but I made mine with only 5 ingredients!

INGREDIENTS

1 large eggplant

1 cup onion & pepper mix

1 Tofurky Italian sausage

pizza sauce

olive oil

*seasonings to taste

INSTRUCTIONS

  1. Pre-heat oven to 425 degrees. Grease pan with olive oil. Slice eggplant and place on pan. Season to taste.Β Bake eggplant for 15-20 minutes.
  2. While eggplant bakes, sautΓ© onions, peppers, and sausage.
  3. When the eggplant is cooked, add pizza sauce and toppings.
  4. Place back into the oven. Broil for 3-5 minutes.
  5. Serve it up!
