5 Minute Meal Prep

This is NO joke! A healthy meal prepped in 5 minutes.

Healthy Lunch On-The-Go

INGREDIENTS

shrimp, pre-cooked

brown rice (90 sec Uncle Ben’s)

onions & peppers, pre-sliced & frozen

black beans, rinsed and drained

canned diced tomatoes with chiles

seasonings to taste (cumin, garlic powder, cayenne pepper, etc)

INSTRUCTIONS

  1. Place ingredients in pot.
  2. Bring to a boil & reduce to simmer.
  3. Cook until all ingredients are heated through.
  4. Pack a serving in your container for lunch on-the-go.

This is a SIMPLE and delicious healthy meal  that can be prepared with minimal effort. No excuses 😉 What’s your favorite quick, healthy meal?? Let me know!
