Light & Healthy Dinner in Under 30 Minutes

Hey y’all!

Today I have a very quick and healthy recipe from my sister (Insta: xoxokeranicole).

This type of meal makes it easy for anyone to eat from home. Check it out!



  1. tilapia (or fish of choice)
  2. olive oil for pan searing
  3. salt
  4. pepper
  5. cayenne pepper
  6. garlic powder
  7. onion powder
  8. cumin
  9. chilli powder
  10. dill weed


  1. black beans, drained & rinsed
  2. quinoa
  3. sautéed onions and peppers
  4. spring green mix

For Dressing 

  1. 1/3 cup olive oil
  2. 2 tbs red wine vinegar
  3. 2 tsp dijon mustard
  4. agave nectar or honey to taste
  5. add any additional seasonings of choice


  1. small potatoes, diced
  2. red onion, diced
  3. olive oil
  4. season to taste

The three parts to this meal can be prepared in under 30 minutes if you’re on your game. Set out all ingredients, cooking utensils, etc while you allow your tilapia to thaw.

Then begin dicing your potatoes and onion. Get those in the oven since they’ll take the longest to cook.

Start your quinoa so it has time to rest before you mix it with the other salad ingredients.

When the fish is thawed, season it up and pan sear it for about 7 minutes or until it reaches your desired texture.

It’s all about multi-tasking here! You can definitely have a healthy, home cooked meal on the fly… just prepare to sweat a little. Haha!
